L'Ecole Nš 41 loses one bottle of wine per barrel per month to evaporation in the cellar. This is referred to "the angel's share."

The remaining 50% of our production comes from long established relationships with proven Columbia Valley vineyards such as Klipsun, Bacchus and Dionysus, Milbrandt, Portteus, Fair Acre Farms, Wahluke Slope Vineyards and Willard Farms. Many of these vineyards were planted in the 1970's or early 1980's, giving us an average vine age for example on our Columbia Valley Cabernet Sauvignon of about 25 years. In each of these vineyards, we have committed rows or blocks of fruit where we work with the viticultural manager at each site to limit yields and manage the canopy for proper balance.
